Roux 101

One of my favorite things to do is to make a roux. A roux is equal parts flour and oil. The trick is to get the roux to the proper stage, blonde, medium or dark without burning it!

Here I’ve cooked the roux to a nice dark brown. The secret… Stir constantly over medium heat.
